The Sylvaner Praepositus is produced from high vineyards at around 600 - 700 metres above sea level in the Bressanone and Varna comunes, with south and southwestern exposures. The grapes here are harvested at the start of October, fermented in stainless steel with only natural yeasts used, and aged partly in stainless steel and partly in 30 hectolitre acacia barrels for 3 months.

Method & Production
This is a beautiful example of Sylvaner; notes of fresh juicy honeydew melon and pear are perfectly balanced with a complex herbal rusticity, thyme, oregano and a slatey minerality. Crisp but everso slightly rounded, this wines shows an elegant restraint and precision and a lovely long finish.
Great with light and delicate fish dishes like scallops or cod.
