The wine goes through a spontaneous ferment in part concrete tanks and part truncated cone wooden vats using indigenous yeasts at a controlled temperature of 28°C for a period of around 13 days. The wine is gently pumped over during fermentation. It is then aged in large untoasted French oak barrels for 12 months and spend 3 months in bottle prior to release.

Ripe fruits such as blackberries and cherries prevail on the nose, with light herbal nuances. This very elegant wine is well-structured and has a clean, refreshing on the palate with great length to finish.
Perfect when paired with roasted meats, Tuscan beef tagliata, roast lamb and game.
