After fermenting in stainless steel, the wine spends a year on the lees in a cement "egg" then another 6 months in bottle before release.

Pale lemon. Intense aromas of dried stone fruits, salinity, and herbs. Developing wine, yet with incredible acidity that maintains the wine fresh and focused. On the palate, recurring notes of dried, mature stone fruits (apricot and peach) and green fruits (pear), backed by citric fruits, as well as herbaceous notes of fennel and stone and salty minerality.Long on the finish.
