Nec-otium Chardonnay di Jacapo

Method & Production

The Chardonnay grapes come from various small plots in Prepotto and Buttrio. Each plot is hand picked and fermented separately in stainless steel using natural yeasts. The wines are then aged on their lees with periodic batonage. Blending trial occur in March/April. After one month the wine is bottled with light filtration. Partial malolactic or full malolactic according to the vintage character.
