Method & Production

Picking date chosen according to tasting berries for optimal maturity. Long maceration of 3-4 weeks, with rack and returns, and gentle punch-downs and pump-overs. Aging in 600L barrels.

Tasting notes

Ruby red. Aromas of black currant and dried olive, with a smoky overtone. Spice, dark fruit, good depth. Finishes pure and fresh, with a strong peppery persistence.
