Method & Production

After destemming, whole berry cold maceration is carried out for a duration of 3 days. Fermentation takes place in “smart tanks” at a controlled. The wine goes through Malolactic fermentation in French and American oak barrels and ages in these barrels for a further 18 months. Stabilization also takes place in barrel, without any clarification. The wine is bottled without filtration.
