Whole bunch clusters are harvested entirely by hand. The grapes are then de-stemmed and put through a soft pressing. The juice is macerated on the skins for 16 hours before fermentation in stainless steal tanks for 15 days at 12°C.

Refreshing aromas of herbs such as mint and sage, a floral touch of lemon blossom and citrus fragrance of grapefruit and tropical notes pineapple and mango. Very fresh on the palate, with green apple and lemon flavours.
Shellfish works really well with this wine, something like a crab salad would be a great accompaniment.
