Method & Production

Spontaneous fermentation by local yeasts, for around 10 days in open concrete tanks, 30% whole clusters. Ageing in French oak for 12 months before release.

Tasting notes

Blackcurrant, cracked pepper, violets, herbs and mineral aromas. Silky tannins with a medium body, and long finish.
