Spontaneous fermentation by local yeasts, for around 21 days. 1/3 fermented and aged in French oak barrels and the remaining in stainless steel. Bottled unfiltered.

A beautiful pale gold colour. Pear, quince, fennel, fresh herbs, orange peel and honeyed aromas. Dry palate with a long harmonious finish.
Works really well with aromatic dishes, Asian cuisine, fish cakes, roast chicken, and salads.
