Harvest of the Furmint grapes took place in late September/beggining of October. The free run juice and a small amount of pressed juice is used for this wine, the remaining press juice gos towards a blended wine. Each step of handling was made with minimum air contact. 3 weeks’ fermentation in stainless steel tanks at between 15˚ - 20˚C. 10% of the wine was then barrel fermented in old Seguin Moreau French 225 litre barriques and left to mature on the fine lees for four months. Gentle filtration without fining, followed by bottling in Febuary.

Method & Production
Fragrant grass, apple, and peach on the nose. Stone fruit combined with gentle oak and lively acid are nicely balanced on the palate. This noble wine shows delicate but unusually persistent flavour.
Ideally served with fresh oysters
