Hand picked and hand sorted. Gently destemmed and fermented in small open top fermenters with a small percentage of whole bunches included. The wine is plunged by hand, four times per day during fermentation after which it is lightly pressed without any post fermentation maceration. The wine is then aged over ten months in 100% French oak, prior to light filtration and bottling.

Fruit driven with flavours of cherries and red currents. Subtle hints of liquorice and spice. A wine with great freshness and purity with an intriguing savoury finish.
This is a very versatile wine with many food matching options! It would be a great accompaniment to game dishes and matches really well with mushroom based sauces.
