The vines grow on clay and marl soils and are trained using single Guyot. Each variety is fully destemmed before undergoing around three weeks of maceration and fermentation. Malolactic fermentation takes place in barrel, 50% of which is new, followed by around 20 months of ageing in the same barrels with occasional racking. Bottled without fining or filtration.
