Method & Production


Mixed plantings of 2001 and 1977 on a southern-facing slopes at an elevation of 400m. Picked in the cool of the morning, and pressed. The free-run juice is separated, settled, and fermented with selected yeasts in stainless steel. 3 months lees aging. 


Tasting notes

Very floral nose, blossom, ripe Apple and limes leap out of the glass, the wine has a very mineral edge. The palate shows richness and purity with sweet, mouth-filling fruit. The wine is very focused displaying notes of lime, ripe apples, and minerals, with tangy acidity and great length.
