Method & Production

The village of Biancavilla is home to the vineyards of the old contrada of Il Purgatorio, on the Southern side of Etna. Manual harvest of the Nerello Mascalese and Nerello Cappuccio grapes. Fermentation in stainless steel using selected yeasts, at a controlled temperature. Ageing for 12 months in oak barrels and 12 months in oak casks. 15 months of bottle refinement before release. 

Tasting notes

A deep, gentle wine dressed in bright ruby red, with silky tannins and well-balanced fruit. The body is kept in check by a good level of acidity, which elongates it and acts as the backbone.
