Domaine du Piton

From the small village of Le Piton—meaning “the peak”—perched at an altitude of 312 metres above sea level with breathtaking views over the vineyard, emerges this small-batch project from entrepreneurial family, the Oddo’s. They cultivate eight hectares of Sauvignon Blanc in the single commune of Sancerre, which has been farmed organically since they took over the site. The vines flourish on distinctive Silex soils, imparting that unique flinty character to the wine.

The estate-grown Sauvignon Blanc grapes are harvested by hand, ensuring the highest quality, from 30-year-old vines. The grapes are meticulously sorted and selected both at harvest and upon arrival at the cellar. In the cellar, the exclusive use of gravity and a slow, gentle pressing process allows the team to craft wines with optimum fruit purity. The flint and clay-limestone plots are vinified separately using indigenous yeasts and aged on fine lees for nine months. The resulting wines are complex, remarkably focused and linear, with that distinctive flinty minerality that defines the classic character of this special terroir.
